Borscht-Flavored Ukrainian Beet Dumplings
A hearty Ukrainian-inspired dish filled with a sweet and sour beet-based filling, served as a main course. The beet flavor is enhanced by the addition of a borscht-based broth.

- β1 1/2 cups All-purpose flour

- β1/4 cup Water
- β1/4 cup Chopped fresh dill

- β1/4 teaspoon Ground black pepper
- β1 cup Borscht broth
- β1/4 cup Bitter greens (such as dandelion or arugula)

In a large pan, melt the butter over medium heat.

Add the chopped beets and cook, stirring occasionally, until they are tender, about 20 minutes.

Add the flour and cook for 1-2 minutes, stirring constantly.

Gradually add the water, whisking continuously to avoid lumps.

Bring the mixture to a boil, then reduce the heat to low and simmer for 5 minutes.

Stir in the chopped fresh dill, salt, and black pepper.

In a separate bowl, combine the egg and borscht broth. Mix well to combine.

Add the egg mixture to the beet mixture and stir until well combined.

Divide the dough into small pieces and roll each piece into a ball.
