Tunisian Quesadilla
A delicious and healthy twist on the classic Mexican dish. This Tunisian quesadilla is filled with the exotic flavors of Tunisia, wrapped in a crispy tortilla.
Ingredients
- β4 tortillasuse whole wheat or whole grain tortillas for a healthier option
- β1/2 cup energizing hummushomemade or store-bought
- β1 tsp tunisian spicescumin, coriander, and paprika blend
- β1 cup shredded carrotsadd some crunch and sweetness
- β1/4 cup chopped fresh parsleyfresh and fragrant
- β1/2 cup crumbly feta cheeseoptional, for a creamier taste
Instructions

Preheat a large skillet over medium heat.

In a small bowl, mix together the tunisian spices and a pinch of salt.

Brush both sides of the tortillas with a little bit of oil.

Place a tortilla in the skillet and sprinkle a quarter of the tunisian spice mixture onto half of the tortilla.

Add a quarter of the hummus, carrots, parsley, and feta cheese (if using) on top of the spice mixture.

Fold the tortilla in half to enclose the filling.

Cook for 2-3 minutes or until the tortilla is crispy and the filling is heated through.

Flip the quesadilla and cook for another 2-3 minutes or until the other side is also crispy.

Repeat with the remaining tortillas and filling ingredients.

Cut the quesadillas into wedges and serve hot.
