Vietnamese Bun Rieu Soup
A hearty and flavorful Vietnamese soup made with a rich pork broth, tofu, and a variety of seafood and herbs. Serve with a side of fresh rice noodles and fresh herbs for a truly authentic experience.

- β2 lbs Pork bonesAsk your butcher for pork neck or rib bones
- β1 package Rice noodlesFresh or dried, preferably fresh
- β1 block TofuCubed
- β1 lb ShrimpShelled and deveined
- β2 tbsp Crab pasteFound in most Asian grocery stores
- β1 tsp Fermented shrimp pasteFound in most Asian grocery stores
- β2 OnionsChopped
- β3 cloves GarlicMinced
- β2 tbsp Fish sauceFound in most Asian grocery stores
- β1 tbsp Soy sauceFound in most grocery stores
- β1 tsp SugarOptional
- βto taste Ground black pepperFreshly ground

Step 1: In a large pot, combine the pork bones, onions, and garlic. Pour in enough water to cover the bones and bring to a boil.

Step 2: Reduce the heat to a simmer and cook for 1 hour, or until the bones are tender and the broth is rich and flavorful.

Step 3: Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids.

Step 4: Add the tofu, shrimp, crab paste, fermented shrimp paste, fish sauce, soy sauce, and sugar to the pot. Stir to combine.

Step 5: Bring the soup to a boil, then reduce the heat to a simmer and cook for 10-15 minutes, or until the shrimp are pink and cooked through.
