Greek Salad with Tofu
A refreshing salad with crispy tofu, fresh veggies, and a tangy Greek-inspired dressing.
Ingredients
- β2 tbsp Extra virgin olive oil
- β1 block TofuDrained and cubed
- β1 cup Greek yogurt
- β1/2 Red onionThinly sliced
- β1 large TomatoDiced
- β1 large Bell pepperDiced
- β1 tsp Unrefined salt
- β1 tsp Black pepper
- β4 cups Mixed salad greens

1. Preheat oven to 400Β°F (200Β°C).

2. Toss tofu with 1 tsp olive oil and season with salt and pepper. Bake for 20-25 minutes or until lightly browned.

3. In a large bowl, whisk together olive oil, Greek yogurt, salt, and pepper.

4. Add sliced red onion, diced tomato, and diced bell pepper to the bowl. Toss to combine.

5. Add mixed salad greens to the bowl and toss again to combine.

6. Once the tofu is ready, let it cool for a few minutes before adding it to the salad.
