Irish Cod Gratin
A light and flaky cod dish topped with a creamy gratin, inspired by Irish cuisine. Perfect for a cozy dinner.
Ingredients

- ●1/2 loaf, cubed upper crust bread
- ●4 tablespoons irish butter
- ●1 cup, shredded gratin cheese
- ●1 medium, thinly sliced onion

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Season the cod fillets with salt and pepper.

Melt 2 tablespoons of butter in a skillet over medium heat. Add the cod and cook for 2-3 minutes per side, until cooked through.

Transfer the cod to the prepared baking sheet.

In the same skillet, add the remaining 2 tablespoons of butter. Add the cubed bread and cook until lightly toasted.

In a separate bowl, mix the grated cheese and sliced onion.

Top each cod fillet with the toasted bread mixture.
