Velvet Chicken Earth Bowl
A simple, earthy dish featuring chicken cooked in a rich velvet sauce, served over a bed of earthy greens.
Ingredients
- β1 chicken breastboneless, skinless
- β2 cups veggie brothlow sodium
- β2 tbsp soy sauceor tamari for gluten-free option
- β2 tbsp hoisin sauceor omit for vegan option
- β1/4 cup velvetor cornstarch for thickening
- β1 cup earth (such as mushrooms)any type, sliced
- β1/4 cup green onionschopped
- β1 tsp sesame oiloptional
- βto taste salt
- βto taste pepper
Instructions

In a small bowl, whisk together soy sauce, hoisin sauce, and velvet (or cornstarch).

In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.

Add chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.

Remove chicken from the skillet and set aside.

In the same skillet, add the sliced earth (such as mushrooms) and cook until tender and lightly browned.

Add the veggie broth to the skillet and bring to a simmer.

Return the chicken to the skillet and stir in the soy sauce mixture.

Cook for an additional 2-3 minutes, until the sauce has thickened.

Serve the chicken and earth over a bed of greens, garnished with green onions and a sprinkle of sesame seeds.
