Algerian Vegetable Tagine
A flavorful and aromatic vegetarian tagine dish, made with a variety of vegetables and spices, perfect for a hearty dinner.
Ingredients
- ●1/4 cup LambUsed for flavor and texture, but in small quantity to make it vegetarian
- ●2 tsp Algerian spicesBlend of cumin, coriander, and cinnamon
- ●2 large Velvety potatoesDiced and cooked to perfection
- ●1 large OnionsChopped and sautéed until caramelized
- ●4 medium CarrotsPeeled and chopped
- ●2 large ZucchiniSliced and cooked until tender
- ●1 large Red bell pepperDiced and sautéed until tender
- ●1 can (14 oz) TomatoesDiced and added for flavor and moisture
- ●2 tbsp Olive oilUsed for sautéing and cooking
- ● Salt and black pepperTo taste
Instructions

Heat oil in the bottom of a large clay or ceramic tagine or Dutch oven over medium heat.

Add the chopped onions and cook until they are caramelized, stirring occasionally.

Add the chopped carrots and zucchini, and cook for an additional 5 minutes, stirring occasionally.

Add the diced potatoes, red bell pepper, and Algerian spices. Cook for 5 minutes, stirring occasionally.

Add the diced tomatoes, salt, and black pepper. Stir to combine.

Reduce heat to low and simmer for 20-25 minutes or until the vegetables are tender.

Taste and adjust seasoning as needed.
