Brazilian Pork Stew
A hearty and flavorful stew originating from Brazil, perfect for a chilly evening. The velvety texture of the sauce pairs well with the tender pork.
Ingredients
- β2 lbs Pork shoulderCut into 1-inch cubes
- β1/4 cup Velvety chocolateUsed to thicken the sauce
- β2 tbsp Brazilian coffeeUsed to add depth to the sauce
- β1 tsp SaltTo taste
- β1/2 tsp Black pepperTo taste
- β2 medium PotatoesPeel and chop into 1-inch pieces
- β1 medium OnionsChop into large pieces
- β3 cloves GarlicMinced
- β2 tbsp Tomato pasteUsed to add intensity to the sauce
- β2 cups WaterTo cover the pork and vegetables

Heat oil in a large Dutch oven over medium-high heat.

Brown the pork cubes on all sides, about 5 minutes.

Add the onions and cook until they start to caramelize, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the tomato paste and cook for 1 minute.

Add the potatoes, coffee, salt, and pepper. Stir to combine.
