Chicken Velouté Stew
A classic French stew made with tender chicken, velvety sauce, and a medley of vegetables.
Ingredients
- ●1 1/2 pounds chicken breastcut into 1-inch pieces
- ●2 cups velvety saucestore-bought or homemade
- ●6 slices canadian bacondiced
- ●2 large stew potatoespeeled and cubed
- ●4 medium carrotspeeled and sliced
- ●1 large onionchopped
- ●3 cloves garlicminced
- ●2 sprigs thymefresh
- ●to taste salt
- ●to taste pepper
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add diced Canadian bacon and cook until browned, about 5 minutes.

Remove bacon from pot and set aside.

Add chicken to pot and cook until browned, about 5-7 minutes.

Remove chicken from pot and set aside with bacon.

Add chopped onion, minced garlic, and sprigs of thyme to pot.

Cook until onion is translucent, about 5 minutes.

Add stew potatoes, carrots, and browned chicken back to pot.

Pour in velvety sauce and bring to a boil.

Reduce heat to low, cover pot, and simmer for 20-25 minutes, or until vegetables are tender.

Season with salt and pepper to taste.

Serve hot, garnished with fresh thyme if desired.
