Kenyan Stew with Olive and Citrus
A flavorful and spicy stew originating from Kenya, made with tender chunks of meat and fragrant spices, served with a squeeze of fresh citrus and a drizzle of olive oil.
Ingredients
- β1 pound stew meat (beef or lamb)Cut into 1-inch cubes
- β2 tablespoons olive oil
- β1 medium onionChopped
- β2 citrus (lemon or lime)Juiced
- β1 teaspoon kenyan spices (ground cumin, coriander, and turmeric)
- βto taste salt and pepper
- β1 can velvety tomatoes (canned)Diced
- β2 cups water

Heat the olive oil in a large pot over medium-high heat.

Add the chopped onion and cook until browned, about 5 minutes.

Add the stew meat and cook until browned on all sides, about 5 minutes.

Add the kenyan spices, salt, and pepper, and stir to combine.

Add the diced tomatoes and water, and bring to a boil.

Reduce heat to low and simmer, covered, for 1 1/2 hours, or until the meat is tender.

Stir in the citrus juice and continue to simmer for an additional 10 minutes.
