Spanish Chicken Paella
A classic Spanish dish made with chicken, rice, and a blend of earthy and velvety flavors.
Ingredients
- β1 pound Spanish sausagecut into bite-sized pieces
- β1 pound Boneless chicken breastcut into bite-sized pieces
- β1 cup Uncooked white ricepreferably Spanish rice
- β4 cups Vegetable brothchicken or beef broth works well
- β2 tablespoons Tomato pasteoptional
- β1 teaspoon Smoked paprikaoptional
- β2 cloves Garlicminced
- β1 medium Red bell pepperdiced
- β1/4 cup Green olivespitted
- β1/4 cup Chopped fresh parsleyoptional

Heat the oven to 400Β°F (200Β°C).

In a large paella pan or skillet, heat 2 tablespoons of olive oil over medium-high heat.

Add the Spanish sausage and cook until browned, about 2-3 minutes.

Add the chicken and cook until browned, about 3-4 minutes.

Add the garlic, red bell pepper, and smoked paprika (if using) and cook for 1-2 minutes.

Add the rice and cook for 1-2 minutes, stirring constantly.

Add the vegetable broth, tomato paste (if using), and bring to a boil.

Reduce the heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked.

Stir in the green olives and cook for an additional 2-3 minutes.
