Kenyan Sardine Skewers with Fried Onions
A flavorful and spicy appetizer that combines the taste of Kenya with the simplicity of a sardine skewer, finished with crispy fried onions.
Ingredients
- β1 (14 oz) can Canned sardines in waterDrained and flaked
- β1 medium OnionsThinly sliced
- β1 medium Red bell pepperSliced
- β2 medium TomatoesDiced
- β2 tsp Kenyan spice blendAvailable at most African markets
- β2 tbsp Lime juiceFreshly squeezed
- βto taste Salt
- βfor frying Vegetable oil

Preheat grill to medium-high heat.

Alternate sardines, onions, bell pepper, and tomatoes on skewers.

Brush skewers with lime juice and sprinkle with Kenyan spice blend.

Grill skewers for 5-7 minutes, or until sardines are cooked through and vegetables are tender.

While skewers are cooking, heat vegetable oil in a pan over medium heat.
