Classic Indian Lamb Rogan Josh
A popular and flavorful North Indian curry made with tender lamb pieces, aromatic spices, and a rich sauce.
Ingredients
- β500g Lamb shoulder or neck bonecut into 2-inch pieces
- β250g Velvety tomato pureecanned or homemade
- β2 tsp Rogan josh spice mixhomemade or store-bought
- β2-inch piece Ginger, gratedabout 2 tbsp
- β3 cloves Garlic, minced
- β1 large Onion, sliced
- β1/4 tsp Cayenne pepper
- β1 tsp Salt
- βfor garnish Fresh cilantro, chopped
Instructions

Heat 2 tbsp of oil in a large Dutch oven over medium heat.

Add the sliced onion and cook until browned, stirring occasionally.

Add the minced garlic and grated ginger and cook for 1 minute.

Add the lamb pieces and cook until browned on all sides.

Add the Rogan josh spice mix, cayenne pepper, and salt. Mix well.

Add the velvety tomato puree and stir to combine.

Bring the mixture to a simmer, then cover the Dutch oven and transfer it to the oven.

Bake at 300Β°F (150Β°C) for 2 hours, or until the lamb is tender.

Garnish with chopped cilantro and serve over basmati rice or with naan bread.
