Uruguayan Pumpking Fry
A sweet and savory combination of pumpkin and Uruguayan spices. A perfect side dish for a chilly evening.
Ingredients
- β2 cups, peeled and cubed pumpkin
- β2 tsp Uruguayan stir fry spice blend
- β2 tbsp olive oil
- β1 medium, chopped onion
- β2 cloves, minced garlic
- β1 tsp salt
- β1 tsp pepper
- β1 tsp velvety brown sugar

Preheat the oven to 400Β°F (200Β°C).

Toss the pumpkin cubes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until tender.

In a large skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat.

Add the chopped onion and cook for 3-4 minutes, until translucent.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the Uruguayan stir fry spice blend and cook for 1 minute, until fragrant.

Add the roasted pumpkin cubes to the skillet and stir to combine with the onion and spice mixture.

Sprinkle the velvety brown sugar over the top and stir to combine.
