Paccheri alla Carbonara
A classic Italian pasta dish made with paccheri pasta, a rich and creamy sauce, and a hint of salty flavor.
Ingredients
- β12 oz paccheri pastapreferably british-made
- β2 tbsp velvety bacon fatfrom 4 slices of cooked bacon
- β1 cup salty parmesan cheesegrated and freshly shredded
- β2 large eggsroom temperature
- βto taste pepperfreshly ground
- βto taste salt
- βchopped fresh parsleyoptional garnish
Instructions

Bring a large pot of salted water to a boil and cook paccheri pasta according to package instructions.

In a large skillet, heat velvety bacon fat over medium heat.

Add grated parmesan cheese to the skillet and cook, stirring constantly, until the cheese is melted and slightly browned.

In a medium bowl, whisk together eggs and a pinch of salt.

Add the cooked paccheri pasta to the bowl and toss with the egg mixture until well combined.

Add the melted parmesan cheese to the bowl and toss until the pasta is well coated.

Season with freshly ground pepper to taste.

Serve immediately, garnished with chopped fresh parsley if desired.
