Ceviche Yucateco
A refreshing and zesty Mexican dish originating from the Yucatan region. This ceviche recipe combines succulent shrimp marinated in a mixture of lime juice, mixed with a hint of velvety avocado and salty cotija cheese.
Ingredients
- β1 pound large shrimppeeled and deveined
- β1/2 cup fresh lime juice
- β1 ripe avocado, diced velvety avocado
- β1 medium onion, diced yucatecan-style onion
- β1/4 cup chopped cilantro ceviche-style cilantro
- βto taste salt
- β1/4 cup crumbled cotija cheese

In a large bowl, combine the shrimp, lime juice, avocado, onion, and cilantro. Stir well to combine.

Refrigerate for at least 30 minutes to allow the shrimp to 'cook' in the lime juice.

Just before serving, stir in the crumbled cotija cheese.

Taste and adjust the seasoning with salt as needed.

Serve immediately, garnished with additional cilantro if desired.

Note: If you prefer a stronger lime flavor, you can increase the amount of lime juice to 3/4 cup or more to taste.
