Slovakian Pork Stew
A hearty and comforting Slovakian-inspired pork stew, slow-cooked to perfection in a rich velvety sauce.
Ingredients
- β1.5 lbs pork shouldercut into 1-inch cubes
- β1 medium onionchopped
- β2 medium carrotpeeled and chopped
- β2 stalks celerychopped
- β2 tbsp velvety tomato pastesee notes
- β1 tsp slovakian allspicesee notes
- β1 tsp saltto taste
- β1/2 tsp black pepperto taste
- β1/4 cup slovakian sour creamsee notes
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Brown the pork cubes in batches until browned on all sides. Remove from pot and set aside.

Reduce heat to medium and add the chopped onion, carrot, and celery to the pot.

Cook until the vegetables are softened, about 5 minutes.

Add the tomato paste and cook for 1-2 minutes, stirring constantly.

Add the browned pork, allspice, salt, and pepper back into the pot.

Pour in enough beef broth to cover the meat and vegetables, and bring to a simmer.

Reduce heat to low and cook, covered, for 2 hours, or until the pork is tender.
