Lamb Tagine with Smoky Flair
A traditional Portuguese-inspired tagine dish featuring tender lamb and rich smoky flavors.
Ingredients
- ●1 (1.5 kg) lamb shouldercut into 2-inch pieces
- ●2 smoky chipotle peppersdiced
- ●1 large onionchopped
- ●3 cloves garlicminced
- ●2 tablespoons tomato paste
- ●1 cup chicken broth
- ●2 tablespoons honey
- ●1 teaspoon cinnamon
- ●1 teaspoon ground cumin
- ●to taste salt
- ●to taste black pepper

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Brown the lamb pieces on all sides, then set aside.

Reduce heat to medium and sauté the onion and smoked peppers until softened.

Add garlic and cook for 1 minute.

Stir in tomato paste, cumin, cinnamon, salt, and pepper. Cook for 1-2 minutes.

Add the chicken broth and honey. Stir to combine.

Return the lamb to the pot and bring to a boil.

Cover the pot and transfer to the oven. Braise at 300°F (150°C) for 2-3 hours.

Remove from the oven and let rest for 10 minutes.

Serve hot, garnished with fresh cilantro (optional).
