Velvety Wonton Soup
A comforting and flavorful soup made with velvety broth, wontons, and navy beans.
Ingredients
- β1 cup, dried Navy beansRinsed and drained
- β4 cups Chicken brothVegetarian option available
- β2 cups Velvety brothHomemade or store-bought
- β20-24 wrappers Wonton wrappersFresh or frozen
- β1/4 cup Sour creamOptional
- β2 tablespoons Sesame oilFor serving

1. Rinse the navy beans and soak them in water for 8 hours or overnight.

2. Drain and rinse the navy beans, then transfer them to a large pot.

3. Add 4 cups of chicken broth and bring to a boil.

4. Reduce the heat to low and simmer for 1 hour, or until the beans are tender.

5. Meanwhile, prepare the wonton filling by mixing 1 cup of the velvety broth with 1/4 cup of sour cream (if using).

6. Lay a wonton wrapper on a clean surface and place a tablespoon of the filling in the center.

7. Dip your finger in water and run it along the edges of the wrapper.

8. Fold the wrapper into a triangle and press the edges together to seal the wonton.

9. Repeat with the remaining wrappers and filling.

10. When the navy beans are tender, add the wontons to the pot and simmer for 2-3 minutes, or until they float to the surface.

11. Serve the soup hot, garnished with sesame oil and additional sour cream (if desired)
