Baked Irish Beetroot Cake
A delightful Irish-inspired dessert made with beetroot, perfect for springtime. Moist and flavorful, this cake is a great way to enjoy the natural sweetness of beets.

- β250g velvety sweet beetrootpeeled and grated
- β150g irish all-purpose flourgluten-free
- β100g northern sugarwhite sugar
- β50g bake butter, softened
- β2 eggs, large
- β1 tsp vanilla extract

Preheat the oven to 180Β°C (350Β°F).

Grease a 20cm (8 inch) round cake pan and set aside.

In a medium bowl, whisk together flour, sugar, and a pinch of salt.

In a large bowl, whisk together beetroot, softened butter, eggs, and vanilla extract.

Add the dry ingredients to the wet ingredients and mix until just combined.

Pour the batter into the prepared cake pan and smooth the top.
