Bhuna Chicken with Apricot Salsa
A spicy Indian-inspired dish featuring tender chicken cooked in a rich bhuna sauce, served with a sweet and tangy apricot salsa.
Ingredients

- β200ml velvety coconut milk
- β2 tsp uruguayan paprikasmoked paprika for added depth
- β100g apricot jam
- β2 tsp bhuna curry powder
- β2 tbsp olive oil
- β1 onionchopped
- β2 cloves garlicminced
- β1-inch gingergrated
- βto taste salt
- βto taste black pepper

Heat oil in a large pan over medium-high heat.

Add onion, garlic, and ginger. Cook for 5 minutes or until onion is translucent.

Add chicken breast and cook for 5-7 minutes per side or until cooked through.

Add bhuna curry powder and paprika. Cook for 1 minute.

Stir in coconut milk. Bring to a simmer and cook for 5 minutes.

For the apricot salsa, mix together apricot jam, salt, and black pepper.
