Spicy Vegan Thai Curry
A flavorful and spicy Thai-inspired curry with a rich, creamy, and slightly sweet sauce, made with velvety coconut milk, served with steamed vegetables and rice.
Ingredients
- β2 tablespoons Coconut oil
- β1 small Onion
- β2 inches Ginger
- β2 tablespoons Thai red curry paste
- β1 can Coconut milkfull-fat, 14 oz
- β2 cups Vegetable brothhomemade or store-bought
- β1 Bell pepperany color
- β2 medium Carrots
- β1 cup Snow peas
- β Salt
Instructions

Heat coconut oil in a large pan over medium heat.

Add onion and ginger and cook until softened, about 3-4 minutes.

Add curry paste and cook for 1-2 minutes, until fragrant.

Pour in coconut milk and vegetable broth, and bring to a simmer.

Add bell pepper, carrots, and snow peas, and cook until the vegetables are tender, about 10-12 minutes.
