Vegetarian Courgette Pilaf
A flavorful and light vegetarian dish made with sautéed courgette and served over a pilaf base.
Ingredients

- ●1 cup dry Pilaf
- ●1 cup Vegetarian velvety sauce
- ●2 tablespoons Olive oil
- ●to taste Salt
- ●to taste Black pepper
- ●chopped (optional) Fresh parsley
Instructions

Heat 1 tablespoon of olive oil in a pan over medium heat.

Add the chopped courgette and cook until tender, about 5 minutes.

In a separate pot, heat 1 cup of water and bring to a boil.

Add the pilaf and cook according to the package instructions.

In a separate pan, heat the remaining 1 tablespoon of olive oil over medium heat.

Add the vegetarian velvety sauce and stir to combine.

Add the cooked courgette to the sauce and stir to combine.

Serve the courgette mixture over the pilaf.
