Braised Bamboo and Chestnut Canh
A hearty and flavorful Vietnamese-inspired stew made with tender bamboo shoots and roasted chestnuts. Perfect for a chilly evening meal.
Ingredients

- β1 cup, sliced bamboo shoots
- β1 cup, peeled and chopped roasted chestnuts
- β2 tablespoons canh chua paste
- β1 tablespoon fish sauce
- β1 tablespoon sugar
- β2 tablespoons vegetable oil
- β1/4 cup, chopped green onions
- β1/4 cup, chopped cilantro

Heat the butter in a large pan over medium heat.

Add the sliced bamboo shoots and cook until slightly browned.

Add the roasted chestnuts and cook for another 2-3 minutes.

Add the canh chua paste, fish sauce, and sugar. Stir to combine.

Pour in the vegetable oil and stir-fry for 1-2 minutes.
