Korean Jjigae Stuffed Bell Peppers
A sweet and spicy twist on traditional stuffed peppers. The Korean jjigae adds a rich, savory flavor to the dish.
Ingredients
- ●4 Bell peppersany color
- ●1/2 cup Korean jjigae saucestore-bought or homemade
- ●1 cup Ricecooked
- ●1 cup Mushroomssliced
- ●1/2 cup Oniondiced
- ●2 cloves Garlicminced
- ●2 tbsp Soy sauceoptional
Instructions

Preheat oven to 375°F (190°C).

Cut the tops off the bell peppers and remove seeds and membranes.

In a large skillet, sauté the mushrooms, onion, and garlic over medium heat until tender.

Add the Korean jjigae sauce and stir to combine. Bring to a simmer and let cook for 2-3 minutes.

Stuff each bell pepper with the jjigae mixture and top with cooked rice.

Place the stuffed peppers in a baking dish and cover with foil.

Bake for 25-30 minutes or until the peppers are tender.

Remove foil and bake for an additional 5-10 minutes or until the tops are lightly browned.

Serve hot, garnished with green onions and a drizzle of soy sauce if desired.
