Vibrant Brazilian Pilaf
A colorful and flavorful Brazilian-inspired pilaf dish, perfect for a weeknight dinner.
Ingredients
- β1 large Red bell pepper
- β1 medium Yellow onion
- β1 cup, trimmed and cut Green beans
- β1 cup Vibrant rice
- β1 tsp Brazilian-style seasoningAvailable at most grocery stores or online
- β1 tsp Pilaf seasoning

Heat 2 tbsp of oil in a large skillet over medium-high heat.

Add the red bell pepper and cook for 3-4 minutes, until tender.

Add the yellow onion and cook for an additional 2-3 minutes.

Add the green beans and cook for 2-3 minutes, until tender.

Add the vibrant rice, Brazilian-style seasoning, and pilaf seasoning to the skillet.

Stir to combine and cook for 1-2 minutes.

Add 2 cups of water to the skillet and bring to a boil.

Reduce heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.
