Thai Chicken Curry Bowl

Ingredients
- β1 pound boneless, skinless chicken breastcut into bite-sized pieces
- β2 tablespoons curry pastehomemade or store-bought
- β1 can (14 oz) coconut milkfull-fat for richer flavor
- β1 medium red bell peppersliced into thin strips
- β1 medium onionsliced into thin rings
- β1/4 cup fresh cilantrochopped for garnish
- β1 cup basmati ricecooked according to package instructions
- βto taste salt
- βto taste black pepper
Instructions

Heat oil in a large skillet over medium-high heat.

Add chicken and cook until browned, about 5-6 minutes. Remove from skillet and set aside.

Add curry paste to skillet and cook for 1 minute, stirring constantly.

Add coconut milk and bring to a simmer.

Add bell pepper and onion to skillet and cook until tender, about 5 minutes.

Return chicken to skillet and stir to combine with curry sauce.
