Crispy Jamaican Plantain Fritters
A delicious and easy-to-make snack or side dish made with ripened plantains, jamaican spices, and crispy fried exterior.
Ingredients
- β2 ripe plantainsabout 2-3 inches long
- β1/2 cup all-purpose flourfor dusting
- β1 tsp jamaican jerk seasoningadjust to taste
- β1 eggsbeaten
- β1/2 cup vegetable oilfor frying
- β1/4 cup crispy corn flakescrushed for coating

Peel the plantains and slice them into 1-inch rounds.

In a shallow dish, mix together the flour and jamaican jerk seasoning.

In a separate dish, beat the eggs.

Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.

Dip each plantain round into the beaten eggs and then coat in the flour mixture, shaking off excess.

Place the coated plantains in the hot oil and fry until golden brown, about 2-3 minutes per side.

Using a slotted spoon, remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

Immediately sprinkle the crispy corn flakes over the fritters while still warm.
