Moroccan Chebakia Bites with Mozzarella
A twist on traditional Moroccan pastries, these crispy bites are filled with melted mozzarella cheese and perfect as a snack or appetizer.
Ingredients
- β1 1/2 cups Flourall-purpose flour
- β1 cup Confectioners' sugarfor dusting
- β2 tablespoons Vibrant orange blossom wateroptional
- β1/2 cup Crispy chopped almondsfor garnish
- β8 ounces Mozzarella cheeseshredded
- β1 teaspoon Moroccan spice blendground cinnamon, ground ginger, ground cumin
- β1 package Chebakiastore-bought or homemade
- β1 cup Vegetable oilfor frying

Preheat the oil in a deep frying pan to 375Β°F (190Β°C).

In a large mixing bowl, combine flour, confectioners' sugar, and Moroccan spice blend.

Add the vibrant orange blossom water and mix until a dough forms.

Knead the dough for 5 minutes until smooth.

Divide the dough into small balls and flatten each into a disk.

Place a piece of chebakia in the center of each disk and top with shredded mozzarella cheese.

Fold the dough over the filling and press the edges to seal.

Fry the pastries in batches until golden brown, about 2-3 minutes per side.
