Vibrant Arabian Bake
A flavorful and nutritious dish inspired by the spices of the Arabian Peninsula, featuring the crunch of eggplant in a tasty bake.
Ingredients
- β1 large Eggplantsliced into 1/2-inch thick rounds
- β1 tsp Vibrant Middle Eastern spice blend
- β1 cup Crunchy pita chipsfor crunch topping
- β1/2 cup Saudian yogurtplain, full-fat
- β2 tbsp Arabian olive oilfor brushing eggplant
- β350Β°F Bakeoven temperature

Preheat the oven to 350Β°F.

Line a baking sheet with parchment paper.

Arrange the eggplant slices on the prepared baking sheet.

Drizzle the Arabian olive oil over the eggplant and sprinkle with Vibrant spice blend.

Bake for 20-25 minutes, or until the eggplant is tender and lightly browned.

Meanwhile, mix the Saudian yogurt with a pinch of salt and a sprinkle of Vibrant spice blend.
