Vietnamese Shrimp Cha Gio
A Vietnamese-inspired shrimp spring roll recipe, perfect for a quick and easy meal. The combination of shrimp, pork, and crunchy vegetables creates a delicious and refreshing dish.

- β1 pound Shrimppeeled and deveined
- β1 package Giospring roll wrappers
- β1/2 cup Chaminced pork
- β1/2 cup Carrotgrated
- β1/2 cup Cucumbersliced
- β1/4 cup Vietnamese herbchopped
- β2 cloves Garlicminced
- βto taste Salt
- βto taste Black pepper
- β2 tablespoons Vibrant oilpeanut oil

1. Prepare the shrimp by peeling and deveining them.

2. In a large bowl, combine the shrimp, cha, carrot, cucumber, and Vietnamese herb.

3. In a small pan, heat 1 tablespoon of vibrant oil over medium heat.

4. Add the minced garlic and cook for 1 minute, until fragrant.

5. Add the shrimp and cha mixture to the pan and cook for 2-3 minutes, until the shrimp are pink and cooked through.

6. Soak a spring roll wrapper in warm water for 10-15 seconds, until pliable.

7. Place 1 tablespoon of the shrimp and cha mixture in the center of the wrapper.

8. Fold the bottom half of the wrapper up over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

9. Repeat with the remaining ingredients to form 10-12 spring rolls.

10. Heat the remaining 1 tablespoon of vibrant oil in a large skillet or wok over medium-high heat.
