Portuguese-Style Lamb Stew
A hearty, gluten-free stew made with tender lamb and vibrant vegetables.
Ingredients
- β1 1/2 pounds Lamb Shoulder
- β2 Vibrant Bell Peppers
- β1 large Gooey Onions
- β2 cups Stew Tomatoes
- β2 tablespoons Portuguese-Style Seasoning
- β1 cup Red Wine
- β4 cups Gluten-Free Broth
- β1/4 cup Fresh Cilantro

1. Heat oil in a large Dutch oven over medium-high heat.

2. Sear the lamb shoulder until browned on all sides, about 5 minutes.

3. Remove the lamb from the pot and set aside.

4. Add the sliced onions to the pot and cook until they're softened and caramelized, about 8 minutes.

5. Add the sliced bell peppers to the pot and cook until they're tender, about 5 minutes.

6. Add the stew tomatoes, Portuguese-Style seasoning, red wine, and gluten-free broth to the pot.

7. Return the lamb to the pot and bring the mixture to a boil.

8. Cover the pot and transfer it to the oven.

9. Braise the stew in the preheated oven at 300Β°F (150Β°C) for 2 1/2 hours, or until the lamb is tender.
