Chicken Satay with Peanut Sauce
Grilled chicken skewers served with a creamy peanut sauce. This dish is a classic Malaysian street food.
Ingredients
- β500g Chicken breast
- β250ml Coconut milk
- β200g Peanut butter
- β50ml Soy sauce
- β100g Brown sugar
- β50g Ginger paste
- β25g Garlic paste
- β25ml Vegetable oil
- β50g Satay spice blend
- β100g Fresh cilantro

1. In a blender or food processor, combine coconut milk, peanut butter, soy sauce, brown sugar, ginger paste, garlic paste, and satay spice blend. Blend until smooth.

2. Heat 2 tablespoons of vegetable oil in a saucepan over medium heat.

3. Pour the peanut sauce into the saucepan and bring to a simmer.

4. Reduce the heat to low and let the sauce simmer for 5 minutes, stirring occasionally.

5. Meanwhile, cut the chicken breast into 1-inch pieces.

6. Thread the chicken pieces onto skewers, leaving a small space between each piece.

7. Brush the chicken with a little vegetable oil and season with salt and pepper.

8. Preheat a grill or grill pan to medium-high heat.

9. Grill the chicken skewers for 5-7 minutes per side, or until cooked through.
