Morcilla Skewers with Roast Vegetables
A flavorful and colorful dish, featuring morcilla skewers paired with vibrant roasted vegetables.
Ingredients
- β250g MorcillaSpanish blood sausage
- β2 Red Bell Peppersliced
- β1 Yellow Onionsliced
- β1/4 cup Mediterranean Olivespitted
- β1 Zucchinisliced
- β2 Red Tomatocherry
- β2 tbsp Olive Oil
- βto taste Salt

1. Preheat grill to medium-high heat.

2. Thread morcilla onto skewers, leaving space between each piece.

3. Brush skewers with olive oil and season with salt.

4. Grill skewers for 4-5 minutes per side, or until morcilla is cooked through.

5. Meanwhile, toss sliced red bell pepper, yellow onion, and zucchini with olive oil and season with salt.

6. Spread vegetables on a baking sheet and roast in the oven at 425Β°F (220Β°C) for 20-25 minutes, or until tender.
