Saudi Lamb Skewers
A traditional Middle Eastern dish made with marinated lamb, perfect for grilling. Serve with a side of couscous or rice.
Ingredients
- β500g lamb Shoulder or leg meat
- β2tbsp vibrantVibrant spice blend or a mix of cumin, coriander, and paprika
- β4tbsp olive oilFor marinating
- β2tbsp lemon juiceFreshly squeezed
- β2 cloves garlicMinced
- β1 tsp saltTo taste
- β1 tsp black pepperTo taste
- β2 tbsp saudiSaudi spice blend or a mix of cinnamon, allspice, and cardamom
- β10-12 skewersMetal or bamboo

In a large bowl, whisk together olive oil, lemon juice, garlic, salt, and black pepper.

Add the lamb to the marinade and mix well to coat.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat the grill to medium-high heat.

Thread the marinated lamb onto the skewers, leaving a little space between each piece.

Brush the skewers with the remaining marinade and season with vibrant spice blend and saudi spice blend.

Grill the skewers for 8-10 minutes per side, or until cooked to your desired level of doneness.
