Filipino-Style Wild Pork Dinuguan with Leaves
A hearty and savory Filipino dish made with wild pork, herbs, and a rich, garlicky sauce, served with vibrant leaves.
Ingredients
- β1 pound Wild Pork Shoulder
- β3 cloves Garlic
- β1 bunch Fresh Leaves (Panggang or Malunggay)
- β2 tablespoons Filipino Vinegarsuch as Sukang Iloko or vinegar of choice
- β2 tablespoons Patis (Fish Sauce)
- β1 teaspoon Black Pepper
- β1 teaspoon Savory Salt
- β1 tablespoon Dinuguan Spice Mix
- β1 tablespoon Rice Vinegar
- β2 cups Water

1. In a large pot, boil the wild pork shoulder in water until tender, about 20 minutes.

3. In a blender or food processor, combine the garlic, patis, black pepper, savory salt, and dinuguan spice mix. Blend until smooth.

4. In a pan, heat a tablespoon of oil over medium heat. Add the blended mixture and sautΓ© until fragrant, about 2-3 minutes.

5. Add the vinegar and water to the pan, and stir to combine.

6. Add the cooked pork to the pan, and simmer the mixture for about 10-15 minutes, stirring occasionally.
