Moroccan Chickpea Stew
A hearty and flavorful stew inspired by the cuisine of Morocco, made with chickpeas, aromatic spices, and a hint of sweetness from the sellou. Serve over couscous for a comforting meal.
Ingredients
- β1 can (14 oz) Canned chickpeasdrained and rinsed
- β2 tbsp Sellou (Moroccan date syrup)adjust to taste
- β3 cloves Garlicminced
- β2 tbsp Olive oilfor sautΓ©ing

- β1 tsp Cuminground
- β1 tsp Corianderground
- β1/2 tsp Paprikasmoked
- β1/2 tsp Saltto taste
- β1/4 tsp Black pepperto taste

Heat the olive oil in a large pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for an additional minute.

Add the cumin, coriander, paprika, salt, and pepper. Cook for 1 minute, stirring constantly.

Add the chickpeas, sellou, and 2 cups of water. Bring to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.

Taste and adjust the seasoning as needed.

Serve the stew over couscous, garnished with chopped fresh herbs if desired.
