Smoky Moroccan Lamb Tagine
A hearty and flavorful North African stew made with lamb, aromatic spices, and dried fruits. Serve with couscous or crusty bread.
Ingredients
- β1.5 lbs (675g) lamb shouldercut into small pieces
- β2 tsp Moroccan spice blendavailable at most spice stores or online
- β1 large onionchopped
- β3 cloves garlicminced
- β1 cup (115g) dried apricotschopped
- β1 cup (120g) pruneschopped
- β2 tbsp honey
- β2 tbsp olive oil

Heat the oil in the tagine or a large Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the lamb and cook until browned on all sides, about 5 minutes.

Add the spice blend, apricots, prunes, and honey.

Stir to combine, then add 1 cup (240ml) of water.

Bring to a boil, then cover and transfer to the oven.

Bake at 300Β°F (150Β°C) for 2-3 hours, or until the lamb is tender.
