Spanish Chicken Paella
A flavorful and spicy Spanish-inspired dish made with chicken and saffron-infused rice.
Ingredients
- β1 1/2 pounds chicken breastcut into bite-sized pieces
- β2 cups vibrant rice
- β1 pound spicy Spanish chorizosliced
- β1/2 teaspoon saffron threads
- β2 tablespoons olive oil
- β1 medium oniondiced
- β3 cloves garlicminced
- β2 medium tomatodiced
- β2 cups chicken broth

Heat the olive oil in a large paella pan over medium-high heat.

Add the chorizo and cook until browned, about 2-3 minutes.

Add the chicken and cook until browned, about 5-6 minutes.

Add the onion and garlic and cook until softened, about 3-4 minutes.

Add the tomato and cook for 1-2 minutes.

Add the rice and stir to coat with oil and mix with the chicken mixture.

Add the chicken broth and saffron threads, and bring to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.
