Tunisian Chicken Tagine
A flavorful and aromatic North African stew made with chicken, spices, and dried fruits.
Ingredients
- β1 1/2 pounds Chicken breast or thighsBoneless and skinless
- β2 tablespoons Tagine spice blendAvailable at Middle Eastern markets
- β1 tablespoon GingerFreshly grated
- β2 cloves GarlicMinced
- β2 tablespoons Olive oilExtra virgin
- β1 medium OnionChopped
- β2 medium CarrotsPeeled and chopped
- β1 cup Dried apricotsChopped
- β2 tablespoons HoneyOptional

Heat oil in the bottom of a clay or ceramic tagine or a large Dutch oven over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and ginger and cook for 1 minute.

Add chicken and cook until browned on all sides, about 5-7 minutes.

Add tagine spice blend, carrots, and apricots. Stir to combine.

Add 2 cups of water and bring to a boil.

Cover and transfer to the oven. Bake at 300Β°F (150Β°C) for 30-40 minutes, or until the chicken is cooked through.

Taste and adjust seasoning as needed. If using honey, stir it in during the last 10 minutes of cooking.

Serve hot, garnished with fresh herbs, if desired.
