Mexican Poached Rhubarb with Vibrant Salsa
A twist on traditional Mexican flavors, this dessert combines the sweetness of rhubarb with a tangy and vibrant salsa. Perfect for a weeknight treat.

- β1/2 cup cactus pear puree
- β2 tbsp agave syrup
- β1/4 cup fresh cilantro leaves
- β2 tbsp lime juice
- β1/2 cup red oniondiced
- β1 habanero peppersseeded and finely chopped

In a large pot, combine the rhubarb, cactus pear puree, and agave syrup. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer for 10-12 minutes, or until the rhubarb is tender.

Meanwhile, prepare the vibrant salsa by combining the cilantro leaves, lime juice, red onion, and habanero peppers in a bowl. Stir to combine.
