Polish Sausage Stew
A hearty and flavorful stew made with Polish sausage, vividly colored vegetables, and a peppery kick.
Ingredients
- β1 lb Polish sausageSlice the sausage into 1-inch pieces
- β2 medium CarrotsPeel and chop the carrots into bite-sized pieces

- β1 large OnionChop the onion into bite-sized pieces

Heat 2 tbsp of oil in a large Dutch oven over medium-high heat.

Add the sliced sausage and cook until browned, about 5 minutes.

Remove the sausage from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the chopped carrots, bell pepper, and potatoes to the pot.

Cook for 5 minutes, stirring occasionally.

Add the tomato paste to the pot and cook for 1 minute.

Add the beef broth to the pot and stir to combine.

Return the sausage to the pot and bring the stew to a boil.
