Argentinian Stew
A hearty and flavorful stew originating from Argentina, made with chicken and warm spices. This dish is perfect for a chilly evening.
Ingredients
- β1 pound chicken breast
- β2 medium onions
- β3 cloves garlic
- β2 medium red bell peppers
- β2 cups chicken broth
- β2 tablespoons tomato paste
- β1 teaspoon ground cumin
- β1/2 teaspoon smoked paprika
- β1 teaspoon salt
- β1/2 teaspoon black pepper
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add chicken and cook until browned on both sides, about 5 minutes.

Remove chicken and set aside.

Add onions and garlic to the pot and cook until softened, about 5 minutes.

Add red bell peppers and cook for an additional 2 minutes.

Stir in cumin, smoked paprika, salt, and black pepper.

Add chicken broth and tomato paste, scraping up any browned bits from the bottom of the pot.

Return chicken to the pot and bring to a boil.
