German Shaggy's Beef Stew
A hearty German-inspired beef stew made with tender shanks and a rich broth, perfect for a cold evening. Serve with a side of warm bread or over egg noodles.

- β1 large Onion
- β2 medium Carrot
- β2 stalks Celery
- β2 cups German broth
- β2 tablespoons Tomato paste
- β1 cup Beef broth
- βto taste Salt

- βchopped, for garnish Fresh parsley

Heat a large Dutch oven over medium-high heat.

Season the beef shanks with salt and pepper.

Sear the beef shanks until browned on all sides, about 5 minutes per side.

Remove the beef shanks from the pot and set aside.

Add the sliced onion to the pot and cook until softened, about 5 minutes.

Add the sliced carrot and celery to the pot and cook until tender, about 5 minutes.

Add the German broth, tomato paste, and beef broth to the pot, stirring to combine.

Return the beef shanks to the pot and bring to a boil.
