Chicken Tagine
Traditional Egyptian dish made with chicken, warm spices, and a rich sauce. This recipe is perfect for a cold evening.
Ingredients
- β1 1/2 pounds chicken breastcut into 2-inch pieces
- β4 tablespoons butterunsalted
- β2 tablespoons all-purpose flourfor dusting chicken
- β1 1/2 teaspoons ground cuminwarm spice
- β1 teaspoon ground corianderwarm spice
- β1/2 teaspoon ground cinnamonwarm spice
- β1/4 teaspoon ground gingerwarm spice
- β1/2 teaspoon saltto taste
- β1/4 teaspoon black pepperto taste
- β2 tablespoons vegetable oilfor cooking

Dust the chicken pieces with flour, shaking off excess.

Heat 1 tablespoon of oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Remove the chicken from the pot and set aside.

Add the remaining 1 tablespoon of oil to the pot and reduce heat to medium.

Add the butter and let it melt.

Add the cumin, coriander, cinnamon, and ginger to the pot and cook for 1-2 minutes, until fragrant.

Add the chicken back to the pot and pour in enough water to cover the bottom of the pot.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the chicken is cooked through.

Season with salt and pepper to taste.

Serve the chicken hot, garnished with fresh herbs, if desired.
