Cheesy Potato Tacos
A twist on traditional tacos, these cheesy potato tacos are a flavorful and satisfying meal.
Ingredients

- β1 cup shredded cheesecheddar or Monterey Jack work well
- β1 packet taco seasoning
- β8-10 corn tortillas
- β1 tablespoon vegetable oil
- β1 cup salsamild or hot, your choice
- β1 cup sour creamoptional
- β1 teaspoon cumin
- β1/2 teaspoon chili powder
- β1/4 teaspoon salt
- β1/4 teaspoon pepper

Preheat oven to 400Β°F (200Β°C).

In a large bowl, toss diced potatoes with 1 tablespoon of vegetable oil, 1 teaspoon of cumin, 1/2 teaspoon of chili powder, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper until coated.

Spread potatoes on a baking sheet and roast for 20-25 minutes, or until tender.

In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.

Add taco seasoning packet and stir for 1 minute.

Add roasted potatoes to skillet and stir to coat with taco seasoning.
