Coconut Pupusas
A venezuelan-inspired dish with a warm twist, featuring chewy pupusas stuffed with coconut and pasta.
Ingredients
- β1 can coconut milk
- β8 oz pasta (such as penne)cooked and cooled
- β2 cups masa harina
- β1 cup warm water
- β1/2 tsp salt
- β1/4 cup shredded coconut
- β1/4 cup chopped cilantro
Instructions

Combine masa harina and salt in a large bowl.

Gradually add warm water to the bowl, mixing until a dough forms.

Knead the dough for 5 minutes.

Divide the dough into 8 equal pieces.

Roll each piece into a ball and flatten slightly into a disk.

Place 1-2 tablespoons of the pasta mixture onto the center of each disk.

Top with shredded coconut and chopped cilantro.

Fold the dough over to form a half-circle, pressing the edges together to seal.

Heat a large skillet over medium-high heat.
