Vietnamese Pork Goi Cuon
A refreshing and easy-to-make Vietnamese pork salad roll. This dish is perfect for a light lunch or dinner.
Ingredients
- β1/2 pound Pork loin
- β8 ounces Rice noodles
- β1/4 cup Vietnamese herbs (such as mint, basil, cilantro)
- β1/2 cup Cucumber
- β1/2 cup Carrots
- β2 tablespoons Rice vinegar
- β1 tablespoon Hoisin sauce
- β1 tablespoon Soy sauce
- β1 cup Warm water
- β8-10 Goi wraps (rice paper)

Prepare the pork by slicing it into thin strips and marinating it in a mixture of hoisin sauce, soy sauce, and rice vinegar for at least 30 minutes.

Cook the rice noodles according to the package instructions and set aside.

Prepare the vegetables by slicing the cucumber and carrots into thin strips.

Assemble the goi cuon by placing a few slices of the marinated pork, some cooked noodles, and a variety of vegetables onto a rice paper wrap.

Add a few sprigs of Vietnamese herbs on top of the filling.

Roll the wrap tightly and serve with the warm water mixture for dipping.
