Mediterranean Frittata
A warm and creamy Mediterranean-style frittata perfect for breakfast, lunch, or dinner.
Ingredients

- β1 cup feta cheese
- β1/2 cup kalamata olivessliced
- β1/2 cup artichoke heartscanned
- β1/4 cup sun-dried tomatoesdried
- β1/4 cup fresh parsleychopped
- β salt
- β pepper

Preheat the oven to 375Β°F (190Β°C).

Whisk the eggs in a large bowl and set aside.

In a large skillet, heat 1 tablespoon of oil over medium heat.

Add the sliced olives, artichoke hearts, and sun-dried tomatoes. Cook for 2-3 minutes.

Sprinkle the feta cheese over the top and cook for an additional minute.

Pour the whisked eggs over the top of the skillet and cook until the edges start to set.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set.
