Rajma Masala
A popular North Indian dish made with kidney beans and spices. Serve over basmati rice or with naan bread.

Ingredients
- β1 cup, drained and rinsed kidney beans
- β1 medium, chopped onion
- β3 cloves, minced garlic
- β1 inch, grated ginger
- β1 medium, diced tomato
- β1 tsp, ground cumin
- β1 tsp, ground coriander
- β1/2 tsp, ground turmeric
- β1/4 tsp cayenne pepper
- β1 tsp salt
- β2 bay leaves
- β2 cups water

Instructions

Heat oil in a pan over medium heat.

Add onion, garlic, and ginger. Cook until onion is translucent.

Add cumin, coriander, turmeric, and cayenne pepper. Cook for 1 minute.

Add tomato and cook until it breaks down.

Add kidney beans, salt, bay leaves, and water. Bring to a boil.

Reduce heat to low and simmer for 20 minutes.
